Blissfully Blue Dressing
Murray’s Cheese in Grand Central Station is one of my favorite spots in New York City. It’s where I go when I’m in the mood for cured meats, premade gnocchi, and cheese. I’m completely obsessed with cheese and even though I am lactose intolerant, I treat myself to a taste at least once or twice a week. I especially like their selection of blue cheeses. I use Dansk Blue, a brie-style cheese, in my recipe. However, any old blue cheese will do. This dressing goes especially well on crunchy romaine or iceberg lettuce.
Makes about 3/4 cup
1/4 cup crumbled blue cheese
1/2 cup plain Greek yogurt
1 garlic glove, minced
4-5 tablespoons extra virgin olive oil
1 tablespoons lemon juice
In a small bowl or food processor, whisk/ blend blue cheese and yogurt. Add garlic and whisk/ blend for another minute. Add olive oil, one teaspoon at a time, and continue to blend until smooth. Add lemon juice. Use immediately or store in the refrigerator for up to 3 days.
For thinner dressing, add more olive oil one tablespoon at a time.
